More spark than fire at Miami debut of Francis Mallmann

Faena Hotel 201 Collins Ave Miami Beach FL 33140 United States

Arguably the most famous chef in South America, Argentine grill-master Francis Mallmann presides over a casual gourmand inside eccentric Faena Hotel. A whimsical space that is evocative of the cafés of old Havana offers a eat-at counter and open kitchen with wood-fire grill that’s the centerpiece of the eatery. While it’s difficult to recreate the locational magic of Mallmann’s charming Jose Ignacio and Mendoza eateries in high-rise Miami Beach, the outpost satisfies gaucho cravings in a stylish space fitting of the star-chef.

The Food

A lunch and dinner menu begins with smoked beef carpaccio and better wood-grilled octopus or pink grapefruit salad with aged Parmesan and roasted hazelnuts. The dishes lack the freshness of ingredients you’d find in South American whether it's the seafood farfalle or branzino fillet on cast-iron served with crispy polenta and avocado.

Last Word

A contemporary asado experience with an open-fire kitchen, local ingredients and a gaucho’s touch transforms traditional rustic recipes into sophisticated, savory dishes.
