The Food
Chefs Jaimie van Heije and Tommy den Hartog are exemplary students of the gastronomical movement and have created a menu of tantalizing meals that charm and inspire the palate. Parmesan sticks dipped in squid ink with a “frozen pearl” of cocktail oysters, foie gras with red beet, steak tartar and apple accents: dishes aspire to a complex and divinely creative arrangement of complimentary and contrasting textures, flavors and structural elements.
