  • The Scene:

    Amongst a rolling hillside of lush landscape and water panorama, CasadelMar arrives at the end of a short driveway into an architectural plateau of concrete motor court and topiary walkway that dissects the teak siding of the hotel façade. Through a main lobby dotted with Cassina sofas and minimalist art and colorful bar alit in purple pillows and orange vases, the 2-star Michelin CasadelMar Restaurant comes into sight with its high-back club chairs with Italian slipcovers at oversize tables covered in white linen with bold glasswork adding a visual flair. Wood-paneled walls lined in ornamental Murano glass canisters and wine decanters with glass windows overlooking an outdoor garden landscape.

  • The Food:

    Italian chef Davide Bisetto creates a seasonal menu loosely defined by his “immense love for olive oil, Parmesan, saffron, mustard and balsamic vinegar.” With stints at the Four Seasons Milan and Royal Monceau, he leads this much-heralded and 2-star Michelin eatery with tasting menus titled “Passion, Contemporary and Creazione.” The latter being the most expensive with Consomme of Bloody Mary, steamed langoustines with lime sorbet followed by ossobucco ravioli with balsamic glaze. Main course is a slow-baked sea bass with pistachio followed by duck with dandelion honey and ginger jus.

    Epic Corsican dining room by Italian chef dazzles with simple ingredient in wondrous dishes that could be the best meal in France outside of Paris – at least during summer.
