It's the hottest kid in town, in a well-known restaurant space on Palm Canyon that's gone by the name of Baracco before becoming Trio. 2009's it-scene, a gourmet restaurant and classy drinking bar is almost always crowded with full reservations book that doesn't even need to be on Opentable. The room is more mixed with straight and gay couples than most Palm Springs restaurant that somehow remain very divided, everyone with taut pinkies hovering under goblets of Pinot and muddled cocktail drinks poured through the midnight hour best ordered with a rounc of homemade chips and ranch.

The Food

More gourmet than you expect to find in seasonal resort town like Palm Springs, dinner begins with a great fried artichoke with caper aioli or platter of fired calamari with sweet-Thai dipping sauce that’s a better option for anyone too scared for a homemade pork and veal country pate. A colorful beet salad bursts with ripe pear and pungent blue cheese or signature Trio salad that’s rather boring with its grated carrots and plateau of mixed greens. Main course is a playful collection of Trio Mac n’ Cheese probably better as a side than an entree, Trio Burger accompanied with creamed spinach and Yankee Pot Roast that could compete with the best in LA not just Palm springs.

Well-known restaurant and lounge space in downtown Palm Springs offers sexy seasonal menu of heart American food with a fun bar scene to follow.
