In a ski town with no shortage of starry dining room, Les Airelles managed a culinary coup by landing celebrity chef Pierre Gagnaire for its gourmet dining room. Opulent Alpine architecture mixed with moody, sexy décor leads to the hotel dining room where the décor sparks memories of Elisabeth of Bavaria, known as Sissi the Empress of Austira, known for her fashionable appearance and opulent Hungarian-favored style translated through walls of royal red silks, wood panel walls illuminated by dramatic crystal chandeliers and chairs designed by Olivier Gagniere. Tabletops are adorned with Puiforcat silverware and Hermes tableware amongst a palette of 19th century antiques that make each mealtime meal like modern royal supper.

The Food

“Researcher, explorer and creator of flavors,” Pierre Gagnaire masters ski chic dining in a setting recently awards a 2-star Michelin rating " the highest rating for any Courchevel hotel eatery. A prix fixe or ala carte dinner menu begins ala sea urchin with translucent scallops and dollop of caviar or calf’s sweetbreads with frothy butter. Veal filet ravioli with Gorgonzola and ginger or simple homemade pasta laden with white truffles expand traditional pasta course with rich, hearty creations. Other standout dishes include violet artichoke with Burrata, turbot with green olives and buckwheat pancake with scallop mousseline.

Last Word

Pierre Gagnaire turns Les Airelles dining room into an ode to Elizabeth of Bavaria with 2-star Michelin menu that’s the best in Courchevel.
