IT is the creation of talented head chef Gennaro Esposito, who at a relatively young age has earned two coveted Michelin stars, and partner Massimo Larosa. Together, these icons of Italian cuisine are taking classic ideas and dishes and infusing them with a burst of gastronomic innovation. The location at the scenic Marina Botafoch overlooks the Mediterranean, with gorgeous views of the ancient walled city. The restaurant features a variety of cleverly organized spaces for guests, including a lounge area, cocktail nook, and main floor with views into the busy kitchen. Italian designer furnishings dominate the look and every surface is luxurious and welcoming. Service is uncommonly outstanding.
Chef Esposito describes the concept simply: “Each dish has three main ingredients, which we play with in terms of taste, texture and consistency.” The result is cuisine drawn from Italian tradition, but with intriguing artistry and contemporary sophistication. Classic Iberico ham, Galician oysters, superbly crispy Neapolitan style pizzas, and of course silken pasta dishes that are savory and succulent. Save room for dessert, the kitchen is famed for its after-dinner treats, including caramelized popcorn with mango mousse. The wine list is an extensive blend of imported Italian and worldwide wines and French champagnes. Rare for Ibiza, prices are accessible to everyone.
