Located in the New Wing of Somerset House tucked along The Strand, Spring is a delightful dining room open for lunch and dinner. A formal 19th Century dining room and more casual café-style salon are drawn in period wood windows, high cornice ceiling and natural oak floors. Walls are arranged in artwork by Emma Peascod and Valeria Nascimento among well-trained staffed working the room in stylish Egg and Trager Delaney uniforms. Landscape designer Jinny Blom trims an atrium in black olive trees and climbing floral installation.
The Food
Australian Skye Gyngell is now one of Britain’s and acclaimed chefs serving up a seasonal farm-to-table menu of seared tuna carpaccio, taglionlini with crème fraiche and sage and burrata with confit of Meyer lemon. Main course mixes seasonal ingredients with slow-cooked Middle White, Halibut with beets and grilled lamb with chamomile and asparagus.
