Along the rural road connecting Santa Gertrudis to San Miguel in interior Ibiza, Aubergine occupies one of the many historic fincas that line the roadside. Cast within a blushing white stucco villa, the restaurant is mostly outdoors and cast along a grand terrace with farmhouse tables and white-painted iron chairs. Co-owned by the creator of Atzaro Agro-hotel, the property features an underlying environmental and organic aesthetic that extends to the organic restaurant, to-go grocer and boutique with an array of home and lifestyle products.
The Food
Aubergine offers an all-day farm-to-table blackboard menu of carrot soup, assorted bruschetta and locally grown salads with ingredients like caramelized pumpkin, local feta and quinoa. Heartier food options include black free-range chicken, veggie curry and meat-or-meatless lasagna. Although it’s a beach destination, don’t miss the apple crème brulee or homemade cakes that are worth the trip alone.

The restaurant serves a late breakfast and lunch daily with on-site home shop that’s one of the best in the area.
