Located one floor above Jose Andrés' casual-chic China Poblano in the Cosmopolitan Las Vegas is the Michelin star chef's more formal Spanish tapas eatery called Jaleo. Hardly a formal eatery, a bright and visual space of warehouse-style glass doors is arranged in exotic wood benches and chunky tabletops surrounding a step-up dining room also with an open-style kitchen that's far more casual than your usual Vegas gourmand. Visitors tend towards the young and glamorous with foodies booking the coveted chef's table that offers five or so diners the chance to taste culinary perfection - cooked to order.
The Food
Currently one of the toughest dinner reservations at the Cosmopolitan, a lengthy Spanish-style menu begins with Pan con tomate (crusty bread with tomato confit) topped with farmhouse Manchego or Spanish ham followed by salmon tartare served like an ice cream cone, chicken Croquetas with sweet jam roulade and boneless chicken wings with salsa verde.
