The farm-to-table dining trend with a fashionable lumberjack’s sensibility, Wildebeest is at the forefront of a new Vancouver dining movement that took a swift turn in recent years from fluffily formal to stylishly sustainable. From its fashionable address in Gastown, reclaimed wood panels stretch around the dining room with its exposed brick walls and bar wooden tabletops lined in chunky iron school chairs. Pendant lights are strewn from a cantilevered panel that floats off a rafter ceiling and illuminates a tattooed and bearded clientele of flannel-clad foodies. 

The Food

This “gastronomically daring” dining room emphasizes the practice of whole-animal cookery in a menu that varies between small, medium and large plates. Epic meals begin with spiced pork rinds, smoked foie gras torchon and crispy pork schnitzel followed by slow-poached farm egg with toasted barley, farmhouse brie with shaved pine mushrooms and incredible lamb tartare. Larger mains include Humboldt squid & beans, slow-cooked beef short ribs and house-aged Angus beef ribeye.
